Happy Foodie Friday!
Today I bring a
refreshing and tasty recipe, Mango Tabbouleh. It’s easy to make and you can
enjoy with pita bread or as a salad along with your meal. You only need a few
ingredients to make this delicious
recipe. You can also change some of the ingredients and add what you prefer. I usually add green onion but since I didn't have any in my garden I skipped it.
Ingredients: Serves 1-2
1c Chopped Parsley
2 Tomatoes (cut in to small
cubes and seeds removed)
1 Cucumber (seeds removed)
2 Mangos
2 tbsp. of Bulgur or you can use Quinoa
2 tbsp. extra Virgin Olive Oil
1 tbsp. Balsamic Vinegar (optional)
1 tbsp. Chopped Mint
3 tbsp. of fresh squeezed Lemons
Salt, Pepper, Cumin ( all depending on your taste buds)
Directions:
After you’ve washed your veggies, mangoes, and have dried everything start by chopping finely the parsley and mint. Peel the cucumber and removed the seed as on the tomatoes.
Cut the mango into small chunks and place everything in a mixing dish. Drain the Bulgur well and throw in with the rest.
In separate dish mix the olive oil, vinegar, lemon juice, and condiments. Mix well and pour with the rest.
Once all is well mix, serve and enjoy as you please. Chilled always tastes better and you can drizzle more lemon juice if you like. I like eating mine on flat bread and with some sauté prosciutto. Hope you enjoy this recipe. Have a great weekend!
