I love mushrooms and eat them almost everyday. From raw on my salads to roasted. Either way they are always delicious. Here is a quick appetizer recipe or side dish you can make. It takes less than an hour to make and add or mix in anything you like. I added sausage but you can omit.
Ingredients: Serves 1-2
2c. Baby Portabella Mushrooms
2 Cloves of Garlic (chopped finely)
2 tbsp. Extra Virgin Olive Oil
1/2 White Onion Thinly Sliced
1-2 Sausage(s) of choice ( I used Evergood's Pineapple Sausage)
1 tbsp. Chopped Basil
3 tbsp. Green Onion
Salt, Pepper, Cayenne, Johnny's Garlic Bread Seasoning
Lemon
Directions:
Start by washing all your ingredients and drying them. Preheat your oven to 350-400 degrees. Add 1 table spoon of Olive Oil to a hot pan along with garlic, onion, and cut up sausage(s). Cook until ingredients begin to get color.
In an oven safe pan add the mushrooms, sauted garlic, onion, sausage along with remaining olive oil. Sprinkle with salt, pepper, cayenne, garlic seasoning and pop in the oven for 25-30 minutes.
Making sure the mushrooms
are tender take out of the oven and transfer on to a
different serving dish (or serve in the same pan) and top with chopped basil and green onions. I
like to add fresh squeezed lemon juice.You can eat with bread, alone or a side of protein.
