Tuna Stuffed Tomato






Another Foodie Friday is here and this recipe is perfect for the hot weekend approaching us. It's easy and quick to make. The main ingredients are tomato and can tuna. The rest it's anything you desire. 

Ingredients: Serves 2

-2 Tomatoes
-1 can of Tuna
-Red Onion ( I slice and let sit in lemon juice and salt for a few minutes)
-Radishes
-Olives
-Hummus
-Tabasco
-Pepper and any other spices you'd like

Preparations: 

Drain the tuna, wash tomato and radishes. Slice the top of the tomato and remove the inside. I always save the seeds and pulp and plant them later. The easiest plant to grow and you have fresh homegrown tomatoes all year long. In a bowl combine the tuna, onion, slice radishes and olives, hummus, tabasco, and spices. Mix well and scoop some into each tomato finish with some parsley and viola! In less than 10 minutes you have a quick lunch.

You can add whatever you want to the tuna. Instead of hummus add your favorite dressing. If you don't like radishes or olives mix in cucumber and sweet peppers or celery. It's all up to you. Hope you enjoy!
