Sometimes combining breakfast meals with dessert is the way to go on Fridays, Saturdays, or any day. It's summer and the best way to stay cool is eating sweet cold treats. Here's a recipe for you to enjoy along with family and friends, Waffles on the Rocks. It's perfect for today's 4th of July BBQ's.
Ingredients: Recipe serves 6-7 (whole waffles)
1/2 box of cake mix of choice (I used Betty Crocker super moist fudge)
1/4c Coconut Oil
2 Eggs
11/4c Coconut Milk or Plain Water
Berries of Choice
Banana Slices
Ice cream of choice
Chocolate Syrup
Directions
Start by heating up the waffle maker. Pour half the cake mix in the blender along with oil, eggs, and milk or water. Once the mix is well blended brush some coconut oil on the waffle maker and pour a bit of the mixture on the center. Close and wait about 3-4 minutes total before you take it out.
Once the waffle is done pop it out and let it cool. Take a scoop (or more if you desire) of your favorite ice cream and place it on the center of one whole waffle. Add berries, mango, and banana slices and don't forget to drizzle chocolate syrup.

Another easy treat
you can make is waffle sandwiches. Break the waffle in half and put some
ice cream in between the two slices. Add anything else you might want and enjoy! It's easy and clean up is quick.
