Morning! There's those days were staying in bed is the best
option and guess what, it is. Training for a ½ marathon is hard work for your body, especially if you've never done it before. I’ve been running 6
days a week and my body finally said, give me a break. So I did! When training for anything you must listen to your body. You only have one so it's best you care for it. You also have to refuel and keep it hydrated making sure it never goes on starving mode.
On Sunday I decided to take the day off and relax to recharge for the following day and week. By my side were my two loyal sidekick Nala and Diniro, who later on left to lounge alongside my dad. Since Sundays are meal prepping day I went ahead and made a batch of steel cut oats to for breakfast and have ready for a few days. I usually use instant oats but now I’ve turned to steel cut oats and love the texture once it's cooked. My way of prepping a bowl is topping it with fresh fruits or a spoon full of peanut butter and shredded coconut with bee pollen. It all depends on what I'm craving. The one thing I always add is almond or coconut milk. I must have my morning cup of milk to get going otherwise I feel like something is off. About 7 years ago I made the transition from cows milk to almond and coconut milk and love it. I pour it on everything and it 's perfect for smoothies.

Recipe: Steel Cut Oats
1c Steel Cut Oats
2c Water or milk
Dash of Cinnamon
Honey or Banana for sweetness (optional)

and cook the oats. I like to mix in 1 tbsp. of honey or a whole ripped
banana for sweetness. It’s up to you what you'd like to mix in. I also sprinkle
cinnamon, mix well and serve. I scoop about a third of a cup and store
the rest. Adding fresh fruit to your breakfast is one easy way to have your daily serving of fruit. I also add mixed nuts or granola and sometimes coconut or vanilla greek yogurt. There are so many variations you can make with this and it's a great way to start the day.
