Sweet Tooth: Black Bean Brownies

Happy Hump Day !!! We are closer to the weekend and if you are feeling rundown here is a little treat that can help feel closer to Friday.

I'm a big fan of baking and cooking so when I came across Mind Over Munch on Instagram my jaw dropped and my heart skipped a beat. I admit I have a terrible sweet tooth and I share that with my father who unfortunately is a diabetic. In order to keep pops sugar level stable he tries to limit his sweets and starch intake. So the days of indulging on cheesecake, eclairs, muffins and more are from the past. I began researching and looking for ways to make some of our favorite desserts without loosing the flavor and consistency. I was able to find many foodie and dessert blogs with amazing recipes some having healthy alternatives.

I heard of Black Bean Brownies but yet had to try. So over the weekend I gathered my ingredients popped them in the blender and got baking. The final product was delicious. So moist and perfect. No taste of beans or guilt. I ended up cutting mini squares topped with almonds thinking they would last longer... Wrong! Pops enjoyed them very much didn't even bother asking what they were made of.
