Chia Pudding








 Another Foodie Friday has arrived and today I share a recipe you've probably heard of or know about. Chia Pudding! It's really easy and super good. This recipe uses a few ingredients and can be done overnight and even served as breakfast the next day.

Ingredients: Serves 1-2
-1c of Coconut Milk or Almond Milk/ Rice Milk (your choice)
-2 tbsp. of Chia Seeds
- Honey or sweetener of Choice (or leave as is)
-1 tbsp. of Cacao Powder
- Fruit of Choice
-Granola
-Maison Jar or Glass storage cup

Directions:
For this recipe I used coconut milk but you are welcome to use any milk you like. Serve one cup of milk of choice into a glass jar then add the chia seeds. Mix well close lid tightly and store in the refrigerator overnight. But if you want to serve and eat it the same day pop it in the refrigerator and make sure you stir the mixture every hour within 4 hours. The longer it sits in the refrigerator the thicker it gets.

Once you are ready to serve you can add the sweetener of choice and begin to build you pudding cup. Add the first part of chia pudding on the bottom then add some granola (I added granola which blended in with the pudding) or cereal if you like. Follow by fruits and another layer of pudding. As you can see I added cacao powder to the other half of the chia pudding, but you can leave as is. Lastly one more layer of fruits and serve.

For this recipe you can get as creative as you like and add coconut flakes, mixed nuts,dry fruit, or eat as is. I use this recipe as a dessert and breakfast meal. Depending on what I mix it with. You can make the Chia Pudding cup anytime of the year and enjoy. But goes perfect for these hot summer days.
